With the temperatures rising during the summer months, salads are a perfect meal – they are quick and easy to prepare and don’t require any particular cooking methods. This salad has toppings like cranberries, avocados and pine nuts that will satisfy your hunger, but to really make this a hearty main dish, you can add salami and cheese.

  • cherry tomatoes (anti-oxidant)
  • avocado (protein & good fat)
  • dried cranberries (adds sweetness & nutrition)
  • pine nuts (protein, good fat & amino acids)
  • spring mix salad (use dark greens – romaine lettuce and spinach contain more vitamins and minerals)
  • havarti cheese (protein & calcium)
  • salami
  • girard’s olde venice italian dressing (the best dressing ever)


  • two small bowls
  • knife
  • cutting board


  1. If need be, wash salad
  2. Cut up all toppings
  3. Begin putting items in the bowls. Layer items starting with salad, tomatoes, cranberries, avocado, pine nuts, salami and cheese. Continue the process until each bowl is full.
  4. Slowly pour salad dressing tossing the ingredients as you pour. Serve and enjoy.
