Salad Skills 300x225 Salad Skills“It’s hard to mess up a salad.” I’ve heard that said many times before, but I definitely have had bad salads – wilted lettuce, pale tomatoes with no flavor and greasy dressing. Nothing is more annoying than when you are trying to be healthy, you take a bite of something and feel like you’ve just consumed a piece of cardboard… without salt.

My digestive system sucks, for lack of a better word. For some reason, my body doesn’t break down food the way it should. So, I made a promise to myself that I would try to eat better. I can’t completely delete things like bread, soda or chocolate from my diet, because sometimes the body just craves things that are not good for it. I mean really, can you go into an Italian restaurant and not partake in the warm, fluffy bread that they taunt you with? The answer would be no. But, I figure if I slow down on having those treats, consume less “white” and add more “green” to my diet, that should help. After all, the key to life is balance.

I created my own Summer Salad; I not only impressed K.C. with my salad skills, but I impressed myself. My secret ingredient, Girard’s Olde Venice Italian Dressing. Of course having fresh vegetables and toppings help, but that dressing is to die for. Try it and let me know what you think.
