Oma’s German Marble Cake

I’m not a big dessert person, but as you can see in the Guten Tag webisode, I devour this cake. Petra’s grandmother would make this dessert each time she would visit her in Germany and now it’s one of her favorite desserts to make. I am ecstatic that Petra shared the recipe to her Oma’s (grandmother in German) German Marble Cake. And I am, of course, passing it along. Enjoy!

Total Time: 1 hour & 30 or 40 minutes

Serving Size: 14 – 18 people


  • 1 cup of butter
  • 1 & 3/4 cups of sugar
  • 1 cup of milk
  • 5 egg yolks
  • 3 & 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 5 egg whites
  • 2 tablespoons of sweet cocoa
  • vegetable shortening (to grease pan)


  • bread/loaf pan ( 9 1/4″) or tube pan (10″)
  • large bowl
  • hand mixer or fork
  • medium bowl
  • Cake plate or Platter


  1. Remove butter from refrigerator to soften (to room temperature)
  2. Preheat oven to 350 degrees Fahrenheit
  3. Grease and then flour the pan
  4. Place butter in large bowl and add sugar. Cream the butter with the sugar by adding a little sugar at a time and mix until you have a perfect mixture of the two ingredients.
  5. Separate egg whites from egg yolks and then add egg yolks to the butter and sugar.
  6. Mix for 10 minutes.
  7. Slowly add flour and milk, alternating the two ingredients as you stir.
  8. Add in baking powder and stir
  9. In a separate bowl, beat the egg whites with the mixer until it looks like champagne (approximately 1 & 1/2 minutes)
  10. Simultaneously pour in and fold (gently blend not stir) egg whites into the batter (use spatula)
  11. Set aside 1/4 of the batter. Pour the rest into the greased/floured pan and gently shake pan to level the batter.
  12. Add cocoa to the reserved batter that you set aside.
  13. Pour reserved batter into the pan as you fold it with a fork. This makes the marbled effect.
  14. Place in preheated oven and bake for 60-70 minutes.
  15. Remove from oven and let cool for 10 minutes.
  16. Slice and enjoy with ice cream

Note: Check on cake after 50 minutes. If you gently shake the pan and the cake moves let it continue to cook. You can check to see if cake is ready by sticking a fork or toothpick in it. If there is batter on the pick or utensil then it isn’t ready.
