Kartoffelpuffer are german potato pancakes. They are extremely popular in Germany especially at the outdoor markets during the winter months. These freshly made fried pancakes are usually accompanied by homemade applesauce. Follow Petra’s recipe below to indulge in this traditional German treat.

Prep Time: 20 minutes

Cooking Time: 15 minutes

Total Time: 35 minutes

Serving Size: 6-8 people

INGREDIENTS:

  • 6 (raw) medium sized potatoes
  • 1/2 cup of onions (finely chopped)
  • 2 eggs
  • 2 tablespoons of all-purpose flour
  • 1/4 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 cup vegetable oil (per skillet)

TOOLS:

  • grater
  • peeler
  • large bowl
  • medium bowl
  • hand mixer or wooden spoon
  • 2 large skillets
  • pot spoon
  • paper towels
  • large platter

PREPARATION & METHOD:

  1. Peel and grate potatoes
  2. Finely chop onion
  3. Pre-heat oil in large skillet(s) over medium-high heat
  4. Combine potatoes and onions in a large bowl and add salt and pepper (blend with your hands)
  5. In a medium bowl, mix eggs, flour and baking powder with a hand mixer or wooden spoon
  6. Check temperature of oil by placing a small portion of potatoes in skillet. If you don’t hear a sizzling sound, the oil isn’t hot enough
  7. Once oil is ready, use a pot spoon or your hands to gather a mixture of potatoes. Squeeze excess water out and then carefully place the heap in the skillet.
  8. Flatten heap with wooden or pot spoon. Continue to place potato heaps in skillet (4-5 per skillet). Flip over each pancake once edges are golden brown. Cook for approximately 2-3 minutes on each side. Repeat cooking process until all the potato batter has been cooked.
  9. Once pancake has been cooked on each side, place on paper towel to drain excess oil
  10. Serve hot (on large platter) with Wurstsalat and Homemade Applesauce. Enjoy!

Note: Can cook pancakes more quickly if you use two skillets.
