I was imagining tropical weather, crystal blue water, white sandy beaches, drinks with umbrellas and fried conch fritters… then the squeal of the wheels brought me back to reality. I heard the voice of the train conductor over the loud speaker “next stop Lafayette”. Well, no sunshine or sand for me, but at least I’ll be able to feast on some Belizean Conch Fritters.

Andrea, my high school friend and amazing make-up artist, teaches me how to master make-up, while her mom, Gwelda shows me how to cook Conch Fritters, a Belizean favorite.
